A World-Class Collaboration at The Apurva Kempinski Bali

The five-star luxury resort The Apurva Kempinski Bali has announced their recent collaboration with a brilliant chef who was recognised with the prestigious Meilleur Ouvrier de France: Chef Jean-Yves Leuranguer. From 9 to 18 December 2021, Chef Leuranguer joined hands with the talented chef team of The Apurva Kempinski Bali to introduce a line of elevated culinary experiences that could be enjoyed at the resort’s eclectic dining venues. Traditional and authentic French cuisine was presented, with each of the dining venues highlighting a particular aspect of the culinary culture. To achieve this, Chef Leuranguer worked side by side with the brilliant chefs of the resort, who were led by fellow French native Culinary Director Chef Eric Cocollos. Together, they were curating a wide range of bespoke dishes that were crafted specifically to enhance each of the dining venues. The experience started at the resort’s dynamic beach club as Chef Leuranguer joined hands with Reef Beach Club’s Chef Satria to present a French-style grill at the beachfront venue. Chef Rizqi and Chef Iqbal joined him next, to prepare the beloved sweet patisserie at Selasar Deli. On Sundays, all of the talents came together to enhance the resort’s popular Sunday brunch programme, Brunchcation, with a line of French specialities. Finally, for a truly elevated experience, Chef Leuranguer joined Chef Andrea Astone to introduce Côtes-d’Armor cuisines at Koral Restaurant. Meanwhile, selected VIP guests had an up-close- and-personal dining experience on the highest floor of the resort, at L’Atelier by Cyril Kongo. Born in Paimpol in the coastal region of Côtes-d’Armor, Chef Leuranguer was exposed to the kitchen very early in his life as the son of a cook in the navy. He was inspired by the precision of his father’s movements, and the way everything he crafted was beautifully presented, down to the smallest details. Chef Leuranguer participated in one of the most distinguished craftsmen competitions in the world, the Meilleur Ouvrier de France, in which he won first place. This competition gathers the best craftsmen in France, and receiving recognition from this competition is one of the highest honours for the experts. With his deep understanding of the culinary craft, guests could look forward to a first-class dining experience through his alliance with the resort’s Michelin-star chefs. “This collaboration is the perfect platform for us to learn from each other, while also presenting a cross- cultural experience for our guests,” shared Culinary Director Eric Cocollos. “Chef Leuranguer is an amazing professional.
