Interview with Wouter Eggermont Executive Chef of Cascades Viceroy Bali

You have been a chef for over a decade, when did your passion for food begin?
At the Culinary school, I joined because I like to be hands-on. There have been so many new products that my interest starting to grow for cooking.

How did you get to where you are now?
Follow my dream, live your life and make things happen.

You are from Belgium and have lived in many different places, how does that influence you in the kitchen?
Be open; it is a never ending journey. Everywhere there’s something that attracts your attention. Experiment with it and integrate the “new” flavors as an addition to your cuisine.

Viceroy is known for its amazing food; how would you describe it to those who have never been?
CasCades Restaurant is revered as one of the most romantic restaurant settings in the world, and has a menu to match, filled with organic home-grown vegetables and the best produce sourced internationally. The beating heart of Viceroy Bali hotel, and with its 10-metre-high cone-shaped thatched roof, it immediately impresses. It is inspired by Balinese and Western creations and imbued with classic European sensibility. The perfect setting for a romantic or special occasion, the restaurant offers world-class a la carte and Royal Balinese Rijsttafel dining using only the freshest and highest quality produce.

What are your favorite local ingredients to work with?
I like fresh flavors, to name a few: lemongrass, kaffir lime leaf, lesser galangal.

If you aren’t in the kitchen, where can people find you?
On the beach, enjoying the ocean breeze.

You’re hosting a dinner party for six close friends or family – what will you serve?
Anything, depends on the mood. Can be fresh Barramundi or a quality Wagyu steak or even just a simple nasi goreng with, yes off course, a hot sambal.

Tell us about one life-changing meal.
First time having a diner in the 3 Michelin star restaurant, Hof van Cleve. Then, I understood what they mean with “less is more”.

What advice would you give to someone who wants to start a career as a Chef abroad?
Give yourself the time to adjust and be grateful for the opportunity.

Where do you see yourself in five years?
Life brings the things on the right time. Just be ready for it.
