Bai Yun: Hot Pot Restaurant at The Apurva Kempinski Bali

Another exciting dining experience has arrived at The Apurva Kempinski Bali. This time, the resort announces the opening of Bai Yun, a delightful Chinese hot pot experience. “Bai Yun” translates as “white cloud” in Chinese-Mandarin, and it reflects the dining concept of this restaurant. The inspiration comes from the way hot pots produce heat, which in turn creates the steam that floats in the air, resembling white clouds.

From Mongolia, China and, nowadays, South East Asia, hot pot is a popular dining style that is beloved for bringing people together. Playing an essential role, our talented chefs have crafted a selection of soup bases, such as the chicken herbal, pork collagen and vegetarian. The restaurant also focuses on using fresh seasonal ingredients. Diners will indulge in a wide range of premium- quality meat, fresh seafood, vegetables, noodles, mushrooms, tofu and meatballs. To further enhance the guest experience, each guest is able to select their preferred soups as this restaurant introduces an individual hot pot for its patrons.

“Hot pot is one of the most popular meals in China, and it has long been present in Indonesia’s culinary scene,” Chef Ho Weng Kit shared. “We cannot wait to show the world our take on this popular dining style.”

Bai Yun Restaurant’s Executive Chef Ho Weng Kit has more than 23 years of culinary expertise, especially cooking for large-scale functions. He led the team at one of the biggest catering companies and co-managed the kitchens of one of the largest casinos in Toulouse, France. His culinary passion was first developed in his country of origin, Malaysia, before he moved to France in 2001, with a brief stopover of two years in Singapore. Chef Kit is a competitor by nature, and his skills and creativity have earned him over 30 prestigious accolades across Asia and Europe.

This newly launched restaurant caters to groups from 4 to 150 people, making it an ideal place for casual gatherings or family celebrations. The opening of this dining venue also adds another element to the resort’s Celebrating Diversity programme, a campaign that embraces the diverse aspects of the resort and puts a spotlight on craftsmanship.

Bai Yun welcomes guests on 1 May 2021 and opens its doors daily from 18:00 to 22:00. For more information and reservations, please call 081138209541 or email
