Inspired by one of the Indonesia’s national dishes, Head Chef Danang Wijanarka of Aloft Bali Kuta introduces his main signature dish, Lamb Shank Rendang. Using various locally sourced ingredients from the Island of Gods, chef Danang practices the traditional slow cooking method to produce the most succulent meat and create this delicacy. Seasoned with the freshest herb and spice mixture, the lamb meat is braised for a minimum of 6-8 hours until it turns dark brown, caramelized, and infused with rich flavours. Guests are invited to savour the rendang with several side dishes such as, parata, fresh cucumber, and raita condiment. Available only at DEPOT by Aloft, open daily for breakfast, lunch, and dinner.
