The guest will have a sophisticated choice of three and five -course vegetarian and
pescovegetarian dishes featuring wine pairing as at dinner, showcased Chef Dedi’s
amazing skill and passion of his art. The one that can’t be missed are Butter
Poached “Bay Rock Lobster” ; beautifully fresh-cooked lobster served with potato,
cauliflower, agnolotti, chardonnay uni emulsion, Crusted “Day Caught Snapper” with
five spices, and asparagus cream. Bring non-meat dishes into the next level with the
most appetising Cauliflower Risotto with caramelized cauliflower, pickled onion,
mushroom powder and Smoked Aubergine with hoisin, rice skin and onion soubise.
