PADMA RESORT LEGIAN INTRODUCES EXECUTIVE SOUS CHEF JUAN CARLOS, JAPANESE NIKKEI CUISINE SPECIALIST

Padma Resort Legian is delighted to announce the newest addition to its esteemed culinary team with the appointment of Juan Carlos Jara Eyzaguirre as the Executive Sous Chef.
Young, passionate, and remarkably accomplished are the best words to describe this Peru-born chef. He brings with him a wealth of international experience, having sharpened his skills in dynamic kitchens across Brazil, China, Uruguay, Turkey, Qatar, and now Indonesia.
His culinary journey began in 2011 at a pioneering all-you-can-eat restaurant in Lima, Peru, a restaurant known for introducing the vibrant fusion of Japanese and Peruvian flavours now globally recognised as Japanese Nikkei cuisine. He has gained various experiences in prestigious hotels and restaurants such as Intercontinental (Qatar), Monomono Nikkei Restaurant (Indonesia), Henshin Restaurant (Indonesia), and many more. His talents have earned widespread recognition, contributing to numerous accolades such as Best Modern Casual Dining 2023 and Best Restaurants and Bars 2024 at the Exquisite Media Awards.
Chef Juan brings fresh energy and creativity to TENKAI Japanese Nikkei Restaurant and introduces an array of new menus. Among his signature creations is Parihuela Udon, a dish influenced by his father’s favourite meal, reimagined with umami-rich shrimp, springy udon, and the flavourful combination of Japanese and Peruvian spices. Other exciting additions include Ise Ebi Popcorn, lobster tempura tossed in spicy passion fruit sauce, and Tako, slow-cooked octopus paired with anticucho and huancaína sauce.
To complete the culinary journey, Chef Juan challenges the norm with Miso Ice Cream, a savoury-sweet dessert that reflects his unique approach: “Dessert doesn’t always have to be sweet.”
With over 14 years of experience and a passion for blending Japanese and Peruvian flavours, Chef Juan is set to elevate the dining experience, offering guests an exciting and authentic journey into the vibrant world of Japanese Nikkei cuisine.
