TWO CHEFS, ONE UNFORGETTABLE TABLE AT COURTYARD BY MARRIOTT BALI NUSA DUA RESORT

As the late-August sun dips low over Bali, the Pool Side Terrace at Courtyard by Marriott Bali Nusa Dua Resort will glow in the golden hour, the air scented with fresh basil, smoky Sumatran spice, and the bright citrus of freshly cut lemon. Glasses will clink, conversation will hum, and two chefs will step into the spotlight, ready to create an  evening where cultures meet on a single plate.

On Sunday, 31 August 2025, Chef Collaboration Night brings together the island’s only two Courtyard Executive Chefs for a rare culinary dialogue. It is a meeting of heritage and artistry, an intimate celebration of flavour, craft, and the stories that shape them.

From Italy’s sunlit coasts, Marianno Liuzza, Executive Chef at Courtyard by Marriott Bali Nusa Dua Resort, offers:

  • Parmigiana di Melenzane – grilled eggplant layered with chunky tomato sauce, grana padano cheese, and fresh basil.
  • Insalata di Pulpo – tender octopus and potato salad, brightened with lemon and Italian parsley.
  • Sicilian Cannoli – crisp pastry shells filled with ricotta and jeweled with candied fruits.

From Sumatra’s bold culinary traditions, Donald Hutauruk, Executive Chef at Courtyard by Marriott Bali Seminyak Resort, presents:

  • Naniura Fish Toba – raw fish cured in a zesty lime turmeric emulsion, crowned with pomegranate.
  • Sumatran Picanha – smoked with signature dry rubs, served with cassava leaves and andaliman mashed potato.

Guests will be welcomed with a coconut-infused drink before embarking on this five-course journey, set to the rhythm of cultural fusion beats from a live DJ. The Pool Side Terrace will be styled with Indonesian touches and live food stalls, inviting guests to mingle, taste, and converse with the chefs as they share the inspirations behind their creations.

With only 50 seats available, the evening promises an intimate atmosphere, elevated by on-the-spot lucky draws and a buy-one-get-one offer on arak-based cocktails.

Chef Collaboration Night: Two Chefs, One Unforgettable Table takes place at the Pool Side Terrace, Courtyard by Marriott Bali Nusa Dua Resort, from 5:00 to 8:00 p.m. on 31 August 2025.

Priced at IDR 400,000++ per person, the experience includes a welcome drink, live entertainment, and the chance to savour the craft of two of Bali’s most dynamic culinary talents.
